A vegetarian’s delight! We’re making tasty spinach rice in this episode of #TastyTuesdays with Chris De La Rosa of CaribbeanPot.com With Kale, Swiss Chard and Jamaican Callaloo fresh from the garden, we’ll add some rice, flavor ingredients and simmer everything in coconut milk, for a delightful vegan dish.

For this spinach vegetarian/vegan rice you’ll need…

2-3 cups chopped Jamaican Callaloo
2-3 cups chopped Kale
2-3 cups chopped Swiss Chard
1 teaspoon salt (adjust)
1/2 med onion (diced)
2 cloves garlic (crushed)
1/4 teaspoon black pepper
2 cups water
1 1/2 cups coconut milk
2 tablespoon olive oil
1 scotch bonnet pepper
2 cups parboiled brown rice
